A roux (pronounced roo) is a mix of equal parts melted butter and flour, cooked for a minute or two over medium heat. Add the cheese, let it melt, and your cheese sauce is ready to go. Add 3 Tbsp butter, 3 Tbsp all-purpose flour, and tsp onion powder to the pot.
